Anyone who has heard me hold forth on the topic knows that I believe New York pizza to be the One True Pizza. But it would seem that California pizza styles have managed to creep in there as an influence, despite my best efforts at remaining a purist.

But you wouldn't be even looking for those toppings on a true New York Pizza. IMHO, it is imperative that it is simple. Maybe a few toppings, sure, but they would be regular toppings. Better yet, just a plain slice.
All other pizzas need fancy toppings to make them good. New York Pizza stands strong plain.

Chicago's deep-dish pizza is its own species, and can't really be compared straight-up with pizza from the Northeast, IMO. That isn't the only kind of pizza they make out there, though; you can find more conventional (to our tastes, anyway) varieties there if you wish. But why?
