I got home at about three today and have spent most of my time at home cooking. Last night, I decided (somewhat on a whim) that I would try my hand at making my own seitan, and despite very little instruction at my disposal, found it to be pretty simple. I decided to stick with "Z" names for my male bettas (my last one was Zaphod), and so this one is named after Jack Skellington's ghost dog.

Seiten is...interesting, particularly in texture. I have to prep bins of it on the weekend, though it's more a matter of dicing the pieces up and preparing a marinade of tamari, ginger, red vinegar, garlic, and honey. I've been exploring a lot of food alternatives lately...
