but if you have leftover matzos, you can make this delicious kugel.

8 Sheets of Matzo, crushed
1 1/2 cups warm water
2 16oz cans sliced peaches, drained
1 cup chopped dates
1/2 cup margarine
8 large eggs / 12 medium eggs
1/2 teaspoon nutmeg
1/2 cup sugar
2 cups cottage cheese (fat free is fine)
1/2 cup chopped walnuts
1/4 teaspoon cinnamon
2 tablespoons margarine
1 tablespoon sugar

[1] Preheat oven to 350 degrees. Grease or spray a 13" by 9" baking dish.
[2] Reserve 1/4 cup crushed matzo for topping. Take all remaining matzo and mix it with warm water in a large bowl. Set aside.
[3] Cut each peach slice into 3 or 4 pieces. Reserve 1/2 cup sliced peaches and 1/4 cup dates.
[4] Melt 1/2 cup margarine in microwave. Put it into a third large bowl and whisk in the eggs, nutmeg and 1/2 cup of sugar. Stir in cottage cheese, peaches and dates.
[5] Fold in soaked matzo until just blended. Pour mixture in baking dish.
[6] Pour reserved peaches and dates on top of mixture.
[7] Melt tablespoons margarine. Mix together with walnuts, 1 tablespoon sugar, cinnamon and reserved matzo. Sprinkle evenly over kugel.
[8] Bake for 45 minutes, until kugel is slightly puffed or knife comes out clean.

Steps [4] and [5] are much easier if you let your Kitchenaid Mixer do all the work.
