So when I was home in North Dakota, my parents & I drove down to Devils Lake to visit DK&SK. Their youngest son DJK was in my class in high school, and since he played center to my nose guard on the football team he has probably slammed his body into mine at high speed more than any other person on the planet. Their oldest son CK was one of my basketball coaches. I wasn't really acquainted with their middle son MK, but he went to college with Chuck Klosterman and got a shout out in the intro to
Fargo Rock City. SK and my mother were den leaders for our Cub Scout den one year, and my father and DK were extensively involved in both Cub and Boy Scouts. DK&SK have since retired to Devils Lake, so we went down to visit them. In any event, while there they fed us this desert, which they said was dead simple to make and was undoubtedly delicious.
Frost Strawberry Squares
2 egg whites
1 cup sugar
2 cups crushed strawberries (or blueberries, or probably other berries too)
1 cup whipping cream
1. Beat together egg whites, berries and sugar for 10 minutes in a large bowl. Make sure you use a very large bowl as the mixture will triple in size.
2. Whip cream and fold into mixture. Stir until well blended.
3. Pour into mold or pan and freeze at least six hours.
4. Cut into squares and serve.
Yummy. And no heat required.
