Maybe it was this miso soup. Maybe not. It's yummy anyway, and dead simple to make.
Miso Soup
All Recipes 4 cups vegetable broth
4 shiitake mushrooms
1/4 cup miso paste
4 teaspoons soy sauce
1/3 cup diced firm tofu
2 green onions, trimmed and thinly sliced
1. Bring the vegetable broth to a boil in a saucepan.
2. Add the mushrooms, reduce heat to low, and simmer 4 minutes.
3. Stir the miso paste and soy sauce together in a small bowl.
4. Add the miso/soy mixture to the broth along with the tofu and continue cooking for 1 minute more.
5. Pour the soup into bowls and top with the green onions to serve.
As it happens there was a special on shiitake that day so I used them, but I'm sure plain old mushrooms would have worked just fine and been cheaper. I used white miso, because that's what I had in the fridge. I should buy some seaweed squares to put into it too.
