Crock Pot Garlic Brown Sugar Chicken

When I was a kid, my mother made refrigerator chicken. What this meant is that when she had leftover sauces from other recipes, she'd put it in a container in the back of the refrigerator. When she had enough, she'd make a chicken with that sauce on it. This sounds gross or disturbing to the uninitiated, but it was inevitably delicious.

On Sunday, I found a recipe whose end result smelled very similar to refrigerator chicken. The taste was farther away, but it was still more than good enough to make again. This recipe came up on food.com in my continuing search for good crock pot recipes.

Crock Pot Garlic Brown Sugar Chicken

1 large chicken, cut into serving pieces - I bought six boneless skinless thighs so I wouldn't have to deal with bones in my lunch.
1 cup packed brown sugar
2/3 cup vinegar - I used white vinegar.
1/4 cup Sprite or 1/4 cup 7-Up soda - I bought a twenty oz Sprite.
2 -3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper (regular black or cayenne) - I used 1/2 of black and 1/2 of cayenne.

1. Place chicken in crock pot.
2. Mix all remaining ingredients and pour over chicken.
3. Cook on low for 6-8 hours.
4. Serve over rice.

This is easy. I don't normally have Sprite or 7-Up in my house, but other than that all of the ingredients are things I typically have around. Some of the reviews of the recipe showed concern that the chicken would dry out, but I did not have this problem. I'm not sure if that's because I used all dark meat or because those fears were overblown.

I'm not really sure what the Sprite added. After all, there was a solid cup of brown sugar in the recipe already. Why not add a little more and some water? I'll probably try that next time so I don't have to buy more soda.

I also wasn't completely sure what kind of vinegar to use. Is there an official 'plain' vinegar? I do have seven or eight kinds of vinegar, but none of them was just 'plain' vinegar. I ended up going with white vinegar, which seemed to turn out fine.
