My recently
alluded to relationship has been ended be her after 4+ months, with no hard feelings (at least from me). One the nicest things about it was that I cooked dinner for her very frequently. At some point I realized I hadn't repeated recipes, so I tried hard to do something new every time. I succeeded admirably. This recipe was one of the last things I made for her. It came from the July 2014 Eating Well.
Mussels with Italian Turkey Sausage, Tomato & Basil 1 tablespoon extra-virgin olive oil
2 links hot or sweet turkey sausage, casings removed
2 cloves garlic, minced
1 large shallot, halved and sliced
1 1/2 cups chopped fresh plum tomatoes
1 cup dry white wine
1/4 teaspoon freshly ground pepper
4 pounds mussels, cleaned (I used 3 and it was still arguably too much)
1/4 cup chopped fresh basil
1. Heat oil in a large pot over medium heat.
2. Add sausage, garlic and shallot and cook, breaking up the sausage into small pieces, until it is cooked through, 5 to 7 minutes.
3. Add tomatoes, wine and pepper and bring to a boil over high heat. Stir in mussels. Cover and cook just until the mussels have opened, 4 to 6 minutes.
4. Remove from heat and discard any unopened mussels. Serve with the sauce from the pot, sprinkled with basil.
This said it makes four servings. I used 3 pounds of mussels and the two of us had one huge dinner and one reasonable dinner the next night. If I make it for 2 people again I'll only get two pounds of mussels instead. Otherwise, this recipe is excellent. We served it with crusty bread to suck up the sauces and it was delicious. WIN.
I'd forgotten how much fun it is to cook for someone, and especially for someone who isn't a picky eater. I look forward to doing it again for someone else in the future.
