Last time we went, we stayed at the Hilton New York next to Rockefeller Center - I think it was about $250 a night, which isn't exactly cheap, but not expensive by NYC standards either. The time before that we stayed at a smaller hotel on Central Park West, which was really nice, but not as convenient to things we wanted to do.
I stayed at the Eastgate Tower last time I went. The room was HUGE (Not just for NYC (where I once stayed in a room so small it had just one twin bed and the bathroom was down the hall). It was really big!) and had its own little kitchen. It's an older place and a little on the shabby side, but it was clean and relatively inexpensive, and in a residential-type area that I felt okay walking around in alone, even after dark. I would stay there again.
There's no such thing in midtown. I did stay at the Wellington Hotel on a cheap rate but the place is in dire need of a remodel but it's clean and in a good location. Many British tourist groups stay there. (yes they have a kettle in the room but no mugs)
