Day off.


Slept 8+ hours. Lots of body aches. Lots of laundry, some financial stuff and shopping for necessities as well as items I can purchase in advance for Thanksgiving. I have no idea if I will have a day off other than Thanksgiving. I am attending my friends T-Day celebration which I have done for the past couple of years. I am to bring a side dish and plan to bring a salad so I don’t have to compete for oven time. I am making a broccoli, cranberry and almond salad. I wanted to bring something that has lasting power... one thing about Thanksgiving is the left-overs so I wanted to include something healthy.

Today, I decided I wanted to try making hassleback potatoes. I didn’t get elaborate, just butter with salt ‘n pepper. for those that don’t know: it’s a way to bake a potato with an even distribution of butter and create some delicious crispy edges. Potato slices quickly stuck together when basting but they splayed out wonderfully while baking. Not perfect but a fine first attempt. Potato is a good starter; options for other healthier roots vegetables definitely in the making.
