Thanks so much for sharing! Husband and I are watching our carbs, and you'd be surprised and amazed at how often eggs are consumed at our house. Those are some great ideas. And in this community, I would think a lot of people are looking for fun and easy, not necessarily fancy-schmancy.

I've found a dash of sweet vermouth is also very nice with scrambled eggs.

I love to add mushroom and spinach to my scrambled eggs (or my omelette) and fresh garlic chives and eschallots (green shallots?) I tend to eat a vegetarian diet (with dairy and eggs) so egg dishes are a regular for me.

Oh, and top it off with tomato chutney. mmm.

My mum always has her eggs with dried mushroom, mixed frozen veg and cheese.

A favorite in my household is shoyu eggs which is similar to your suggestion of adding soy sauce but we also add a dash of sugar (usually brown or natural cane sugar). The sweet and savory flavor becomes addicting very quickly. :]
