I would try using a bucket personally.

Then you just bring it to a tank if you're a restaurant and keep them alive until someone orders it, then lop off the head when you're ready, gut it, prepare it, then serve it up, ta da, fresh as can be. It is also possible the place that has live eels for sale will kill it and gut it for you.

You could always temporarily devegetarianize, eat an eel, then revegetarianize.

I had eel once. I don't remember it being all that particularly notable in taste.

I always figured they killed the eel for you right after buying it live; otherwise, I'm thinking the bucket would be the best way to go. I saw a market or two like that in Chile.

As for the taste, the one variety of eel I've knowingly had (conger) tastes like about every other fairly firm-fleshed white fish I've had...tasty, but nothing spectacular.
