okay, here is one for you to play with-- saute chopped onion, I prefer sweet in olive oil. add garlic (chopped, of course) and few red pepper flakes to taste. From here I add chopped olives, either pitted calamata (okay it really is spelled with a K), mild green olives or chopped bella or niciose (I think). That sets the tone of the dish, either tart, mildly sweet or sweet. From here add chopped tomato and/or artichke hearts and /or sardines or lightly breaded chicken cutlets or the salty fish some find delightful on pizza whose name escapes me. (and no it is not the pepperoni fish) Add oregano, basil, salt, rosemary to taste. serve with freshly grated parmesian over pasta. Capers can be added also, maybe shelled green peas. Yum!
