Have you tried Tasty Bites? Very veg friendly. Quite tasty. I keep them at work for emergency lunches. Trader Joe's sells a private label version of the same thing. My parents' grocery store has 'em, and they can also be had on Amazon, or from the company directly. They do require a paper or plastic bowl.
Make a lasagna and freeze it in re-heatable portions? (note, if microwaving, have a glass/ceramic bowl to do it in as the cheese will melt into the plastic) You can do lots of veggies in lasagna, though the more veggies, the more slightly liquid it will be. (spinach, onions, cauliflower, and broccoli all spring to mind. Squash, too)
Soups can be done that way, too. Or massive amounts of, say, veggies and pot roast in a slow-cooker, then freeze portions and cart them with you. (pot roast itself is optional, but the spices are tasty)
You can steam a lot of veggies in the microwave, too.
This may be a very good option, though I'll have to talk to my boss. See, they're supposed to pay for food while I'm on the road, and if I'm cooking it all the time, then it could get complicated. But the idea of having food that is tailored to me is a very nice one. Thanks!
Can I recommend the old standby of broccoli and cheese? All you do is pop the broccoli (or other veggies, but broccoli is really quick) with a bit of water in the bottom of the bowl, cover with platic film and it steams, then throw some cheese on and cook again for a time.
Eggs also cook wonderfully in the microwave, just throw it in a glass and cook.
Oh and quinoa flakes. Just add water and microwave...then eat with veggies or even fruit. Whatever floats your boat.
Potatoes also steam well and then you can throw on some jarred pasta sauce, cheese and a bit of salad.
You can buy those microwave meal things, but I'm not a big fan of them myself.
See, I wish I liked broccoli. I have tried really hard to learn. But alas. I can't stand the stuff. Which makes buying a lot of prepackaged meals difficult, because it's in everything. The potatoes may be workable, though. Thanks!
