Does anyone else have a crock pot/slow cooker? I have been trying to use mine more...I made some awesome meatballs yesterday and you don't need to have it with pasta. Here is the recipe...modified from one I found at AllRecipes.com. My mods are in parenthesis ( Read more... )

I love that every review at AllRecepies is "This was really good/bad, but I made it with [insert list of mods here]." Recipes: they're more like guidelines.

I do not have a slowcooker, but last night I did make ratatouille! No, not because of the movie, but because I had purchased an eggplant and it was my first time cooking with one and the ratatouille recipe seemed easy enough and doable with the things in my fridge. Sadly, I did not have parsley, which the recipe called for and I think (as you noted) would have made the dish better. But it was still pretty good considering it was a new food and everything. ^-^

Yes I love how people are like - this was good, but instead of using a crock pot I did it in the oven, and instead of cheese I used bread crumbs, and instead of 3 hours I cooked it for 2 hours. I'm like...that is a totally different recipe!

Ratatoiulle sounds good! I never know how to cook eggplant. Do you peel it? I made a veggie casserole a few months ago with eggplant, root veggies and polenta and it was good.

I peeled it a little, before deciding peeling was too much work and to hell with that. I also made sure to pick out a recipe that didn't require "salting" the eggplant (squeezing it out and stuff) since that also seemed like way too much work. The recipe just had me dice it and saute, which was easy enough. I was surprised to learn eggplants have little seeds, though!
