As it stands, Ianto likes Sorin. He doesn't know him very well, but he's civil (even if he does make him carry his stuff for him), and easy to talk to. He's curious about Sorin, and if he didn't understand classified work he'd have wanted to know a lot more about what he does. Especially after helping him fix up his arm. He does think that Sorin's a bit unsure what to make of him, but he's okay with that. He would be disappointed if he ever got the idea Sorin didn't like him, but so far he hasn't so he'll keep on talking to him.
And they really need to talk more, because that's pretty small so far as big blocks of text go.
Awww :3, Sorin likes Ianto too! Though he's still a bit cautious around actually liking a human (and still is keeping in mind the impression that Ianto may hunt vampires, which would be bad because Sorin wouldn't want to kill him), so, yes, he'd also be pretty disappointed if Ianto didn't like him either, because Ianto is very interesting and fairly fun :D
[I'm including some stuff from deleted scenes/the BBC's TW S1 site, but you can ignore those bits if you like.]Tosh is the member of Team Torchwood that Ianto can empathise with most. When he first joined, he distanced himself from her just as much as he did the rest of the team, but after Lisa that quickly changed. Although she acted differently around him like the rest of the team, she at least seemed to be trying to get closer to him (or at least wasn't slightly avoidant). He was grateful for that, and after the Brecon Beacons and Mary especially, started to consider her a good friend

Awww. Well Tosh appreciates his protectiveness, and his being willing to talk with her. Lord knows she needs it sometimes, and she needs someone to be a big brother type. I've always seen her as being rather lonely and needing that family support, and she gets that from him.
Now that she's back, of course, she needs that more than ever. There's so much to process and so many things she's seen, she needs someone to rely on. And she's very grateful to have Ianto there to cheer her up and keep her sane, even if she thinks he doesn't get near enough credit for doing so. (And she does admit she thinks he's cute, though in a platonic sort of way.)
Ianto's relationship with Jack is a complicated one, or at least that's how he sees it.
Initially Ianto had just been interested in getting into Torchwood, regardless of what he had to do to get in. In London Jack had always had a reputation, no matter how scarcely he was talked of, and Ianto always had every intention of using that reputation to his advantage if that was what it took. What he didn't expect was to find that not only was Jack attractive, but he was attractive to him. This was a part of the reason Ianto was ready to walk away after they'd caught Myfanwy, and if Jack hadn't made him the job offer then, Ianto wouldn't have bothered Jack again. But he needed the job to save Lisa, and when it was offered Ianto found he could not turn it down

Ianto doesn't really know this Doctor that well, but he knows through talking to other realities versions of him that generally he actually quite likes him. He is quite jealous of him, though this is something he would never admit to, just because of how easily he seems to convince Jack to keep going off with him. Even if Jack does reassure him he's going to come back to Cardiff, Ianto still believes that in a way he is choosing the Doctor over him
( ... )
Again, see above, since all the canon stuff (save the things that haven't happened yet) applies as well. There probably isn't much point in typing that up twice!
Since Jack's return to Taxon, Ianto's been more concerned about him than he would be normally. He knows he can take care of himself, but he the fact he's lost his memories scares him more than he'd like to admit. He doesn't know what happened to Jack in his absence, and he's not sure whether it's a good or bad thing that he doesn't either. He won't admit to it easily, but he does worry that they'll take Jack away again.
However, he is very glad to have him back, despite the circumstances. Although Ianto does talk to people besides Jack, Jack's the one person he really knew from back home. He worries a lot about what Gwen must make of their absence back home, and what's going on without the Hub there, but he is glad to have Jack there to make things more bearable all the same.
