Yay!  You picked one or more of my fandoms!  I'm so happy, and so proud of your excellent taste!  I can't wait to see what you come up with, so here are some suggestions to get you started...

Moll Flanders
I love this anti-heroine, and what I love most is how hard she is to pin down.  She's self-interested and greedy, but also compassionate and very self-aware.  It would be fun to see her defend her philosophy of life (perhaps in a dialogue with a de Sade character, if you want to get really obscure!) or having fun with her highwayman husband.

Dracula
Mina should be the star of the story, and my one major request is not to make her be in love with Dracula!  As for Quincey and Van Helsing, you can ship one (or both) of them with her, or just have them hanging out being badass companions in arms.  Each one of them deserves love, and I think they all share a deep regard for each other that makes them delightful to read about.

Hammer Horror Films
Since these characters are all from different movies, don't feel you have to include them all in one fic- though if you find a way to do so, that would be amazing!  For Victor, I'd like to see the womanizing bastard he was in The Curse of Frankenstein or (more darkly) Frankenstein Must Be Destroyed.  Give me my wicked, brilliant Baron, as redeemable or soulless as you want- I only ask that his partner(s?) not get murdered.

Van Helsing is, to me, the best part of any Hammer Dracula movie.  This isn't just because he's a competent vampire hunter, but because he is the sweetest guy out there, taking time between dashing stunts to comfort children or mercy-kill unhappily vampirised women.  He started a family at some point, as we see in the later movies (perhaps with Marianne, his sort-of love interest in Brides of Dracula.)  What was that life like?  Did he take everyone on monster hunts?  Did he become paranoid and protective, looking under every bed for Dracula?  If you'd rather not focus on domestic life, some of his monster hunting adventures would also be welcome.

As for his great-great-granddaughter, Jessica Van Helsing, she apparently became her grandfather's second in command between her two movies.  So, how did that go?  What was it like to go from hippie girl to unwilling bride of Dracula to true heir to the Van Helsing legacy?

Finally, Sister Hyde offers so many possibilities.  She isn't much eviller than her male alter ego (who started the murders, after all.)  I'm interested in what could have happened if she'd survived, either taking over their body or else cutting some kind of deal and learning to live with Jekyll.

Northanger Abbey
Catherine Morland, would-be gothic heroine, is very dear to my heart.  I like to think that even after her happy marriage to Henry Tilney, she never entirely gave up those dreadful novels.  Maybe she learned how to keep fiction separate from reality, or maybe she ended up discovering actual monsters and villains to fight (whether of the supernatural or mundane variety.)  Either way, I want to see her doing her horror fangirl thing with Tilney!

In General
Things I like, both reasonable and wacky, include gothic horror, bittersweet or hard-won happy endings, porn with plot (non and dubcon are okay,) humor, canon divergence, central female characters, film noir AUs, old west AUs, BDSM, darkfic with a touch of hope, hurt/comfort, and fairy tale allusions.  Don't limit yourself to these things, though- surprise me if you want!

Things I don't like include totally mundane AUs, deathfic (excluding those canon characters who die), exclusion of female characters from the narrative,  infidelity on the part of "good" people (poly/open relationships are fine, evil people cheating are fine), and certain kinks (scat, watersports, m-preg, A/B/O).
