1 In addition to his clear connection with Kara (yes, lover not twin, sure, whatever, but c'mon), there's that whole prophetic element to him that surely ties him to a connection with the Pythian (ahem) oracle.
2 If she weren't already named Athena, I'd be tempted to make her Demeter. What with searching for her daughter and all. You know.
3 Yes, this seems a bit random at first. However, he is the most recent addition to "Olympus." Also, there is always a polar opposition between Apollo and Dionysus, whether you're thinking Delphi or thinking Nietzsche. And you've got that with Anders and [Apollo], whether you're in the main character column or the Cylon column.
We're missing Simon, and we're missing Tori. There's no compelling reason for Simon to be Poseidon, but he's the only male god left. Equally, there's no compelling reason for Tori to be Hera or Artemis. One problem is that we basically have no real feeling for either of these characters. I wouldn't object to Tori as Hestia, but Hestia's not one of the twelve.
Another possible mapping is Baltar as Dionysus (as the most Jesus-like and debauched of the lot) - but then we can do nothing with Anders, really.
Some of these are really a stretch, I grant you.
Hades and Hestia are not among the twelve Olympian gods, so I feel like I oughtn't try and find mappings for them. I do feel, though,
as I have always felt, that Hades will equate to a thirteenth.
