Wow, I didn't think I could make my breaded eggplant any better than I already did, but I managed to, by accident. I was a klutz and dumped too much sesame seed into my breading bowl, so the eggplant slices were breaded almost entirely with sesame seeds (plus a bit of homemade bread crumbs and spices). I fried them in olive oil. Amazingly

Hmmm...and here I am with an eggplant in my fridge and wondering what to do with it lol.. I have sesame seeds, bread crumbs and olive oil...but what sort of spices? lol

I could tell you, but...

No, seriously, just garlic powder and onion powder. I added a bit of cayenne to the second batch, but it is not necessary. To be honest I think the eggplant and the sesame has enough flavor of its own.
