I have no idea if the potato I'm using for dinner is bad or not. It looks and feels like a good potato, but it was in the drawer for a pretty long time. Normally this is one of those times that smell/taste would tell all except I can't smell or taste anything

Yes! Potato that is non-squishy, unwrinkled, and not sprouted should be totally fine. Here's to regenerating with starchy goodness!
