Thanksgiving is coming up, and this year, Mom, Todd and I are having a simple dinner at Mom's condo. The rehab place will let her come home for the day, and we're picking up dinner from the local supermarket, pre-made ( Read more... )

Ask a friend to collect some of the juice from baking the turkey: put that in glass, oven-safe container with a lid and put the stuffing in there with sage. stir every 5 minutes for half an hour and you're done. Make sure the container has an oven safe lid so the water condensates down in stead of drying all out.

Sound good?

If you cant get a friends turkey stock, just buy some and condense it down for a few hours on a simmering heat. That might give it the 'aged' baking taste too.

I'll have to see if I can buy Turkey stock, the odds of anyone wanting to cook a turkey before Thanksgiving are pretty small.

Even a turkey breast will have some drippings, but get chicken or turkey stock too in case you need more liquid. I suggest you don't put it in with the turkey, because it will overcook, but cook it separate with the drippings and broth if you need extra liquid for it.

A lot of places sell a small pack of turkey wings or two legs, which you can cheat-roast in a roasting bag, use the part you roast for a dinner early in the week and save the drippings for your stuffing.
