Everything I've tried making from the pastured pork that I got at the farmer's market has just been incredible. I simply cannot describe the difference in flavor. It may cost 3 times as much, but it is more than 3 times as good

I run a greenhouse and am having trouble convincing beginning gardeners to pace themselves. More than selling a lot of plants, I want to help people have a successful,encouraging experience with gardening so that they'll fall in love with it. Some days, I spend more time advising people than doing anything else. Maybe I can make a difference.
We have a local producer of organic, grass-fed beef. It's amazing! Have you ever tried it?
Grass-fed beef can run from terrible, to amazing. It largely depends on the feed and the breed. The farm that is doing the pork and chicken will have beef later this year. They will be the first local farm to offer cuts instead of needing to buy a quarter minimum. I just don't need 150 pounds of beef at a time.
I've been trying to buy grass-finished beef whenever it's been available, for about 10 years now. And I've bought bison whenever I can, ever since I first tasted it 27years ago. Now I'm trying to limit myself to local meats where the farmer uses management intensive grazing practices, which is better for the animals and the land.
One of these days, the aquifier will no longer support current practices, and bison will cover the plains once more. It's a shame that we can't adjust our behavior to the environment, instead of destroying the environment in an attempt to bend it to our will.
You can actually go to a farm on the other end of the county and buy the grass-fed beef in small quantities. Cool.
