I saw Alton Brown talking about that on an episode of Good Eats. It's a great show, you should check it out if you haven't already.

It's only the best cooking show IN THE WORLD. Especially for geeks.

I've got his book "I'm Just Here for the Food" and it's a really cool cook book too. It tells you some of the science and the WHY behind the different styles of cooking different meats, rather than just giving you a bunch of recipes.
