There is a potluck at work tomorrow, and for me that's just another excuse to bake. Since it's for Halloween, I decided pumpkin would be the way to go.
I made
this recipe, but just did a simple cream cheese frosting dusted with cinnamon, because I wasn't up to making ganache and ginger cream (I only have so many hours in my evening).
The cupcakes turned out really well, they're moist and not too sweet. I think the frosting is a little too sweet. I think next time I'll try a different extract (not vanilla).
Now to eat my actual dinner.
