I tried my hand at making some andouille porkchops on Saturday, and I have to say they turned out AMAZING! Just like mom's :) I will definately have to try more of the recipes she gave me.
On a less positive note, I just finished off my bottle of vodka :( But hey, it's lasted for...3 weeks, maybe? I think that's pretty good!

Ingredients:
2 oz. Andouille Sausage, grated
1 cup Rice Krispies
1/4 cup freshly grated Parmesan cheese
2 Tsp. sweet Paprika
1/2 Tsp. ground Cumin
1/4 Tsp. Salt
1/8 Tsp. Pepper
3 large cloves of garlic, finely minced
1 large egg
4 5oz. porkchops or boneless, skinless chicken breast halves
Prep:
Preheat oven to 350º. Coat baking sheet with nonstick cooking spray and set aside. Cook sausage over medium heat until lightly browned. Add minced garlic and sauté ~3 minutes. Remove from heat.
Place Rice Krispies in plastic bag and roughly crush. Transfer cereal to a large bowl and mix in parmesan cheese, Paprika, Cumin, Salt and Pepper. Add sausage and garlic and toss well to mix. Beat egg in a separate bowl, dip porkchop/chicken into egg and then into cereal mixture, pressing to coat. Bake uncovered until well done in center, about 30 minutes.
