Until we change the nature of UK governance to mandate popular elections for a whole host of additional positions (chief constables, judges, local council executives, that sort of thing) and some direct lawmaking, there won't be a need to move away from manual counts. And those powers of appointment and legislation are jealously guarded by the government for the power they represent.
It's just coincidence that manual counts are relatively difficult to covertly defraud - but if we shift enough votes to postal ballots, that issue should be resolved.
