Coffee Chocolate Chip Cookie Quest.

So on Saturday, I had the most amazing cookie: Coffee Chocolate Chip. It was rich and soft and fantastic, just like any good chocolate chip cookie, but it had a strong coffee flavor (without any bitterness!) and apparently the equivalent of one cup of coffee worth of caffeine ( Read more... )

A quick look at my cookie books show that they use instant espresso powder or instant coffee crystals mixed in with the flour. One use strong black coffee mixed with melted chocolate.

If you go with the instant powders, start with small increments. One of the recipes only uses 2 teaspoons, and I remember making the cookies once, thinking that 2 teaspoons wasn't going to be enough, so I doubled it. Very strong coffee flavor.

Oh, and to avoid having leftover instant coffee I would never use, I usually yoink the packages from hotels and use those. There's usually enough in one package for a couple of batches.

Thanks for the info, but I'm specifically trying to avoid the instant stuff. It inevitably tastes chemically and weird.

It should really be mentioned that all of the variants were quite tasty! I did like set #1 best (the half and half and half of cocoa/white/wheat).

And please, for the love of everything delicious, let me know if you want some ice cream delivered so we can take care of those leftovers ;)
