101 Things: Try 40 New Recipes

1. Stuffed Green Peppers. They were ok, but I would make some changes next time (not pre-cook the meat, more spices). 8/18/2010

2. Happy Healthy Banana Muffins. I made these minus the dates. The recipe made 6 jumbo muffins worth 3 WW pts. each. They were BLAND though, so I think next time I'd add some sugar even if it ups it to 4pts. 8/26/20103 ( Read more... )

I make stuffed peppers all the time and yes, they need tons of seasoning. I mainly use cumin and nutmeg (I know, it sounds weird, but nutmeg is SUBLIME w/ beef!) in mine. If I'm not doing WW then I use a bechamel sauce for the meat and if I am doing WW then I just do stewed tomatoes w/ those spices and maybe a little garlic as the sauce. And I add fresh herbs, if I have them on hand. And then I broil it all w/ fresh parm on top. I serve mine w/ rice. YUM. I think I'm going to have to have this next week.

This had the rice mixed in. They were ok, I'd just tweak it a bit next time.
