Actually I doubt they were ever going to change the name. I think at one point, Pacific Flight 201 or something was a possibility, but here's the deal:
The whole reason Samuel L. Jackson is doing this movie is simply BECAUSE of the ridiculous name. He didn't care about the plot or how bad it could be, he just thought it would be hilarious.
He even told the producers that if they made any changes to the title, he'd quit and walk off the set immediately, probably even sue the production, because its in his contract that the title be kept as "Snakes on a Plane."
