Drunken goat cheese crusted red snapper with red wine mushroom sauce, horseradish garlic mashed potatoes and steamed asparagus.
Crusting was achieved by mixing the drunken goat cheese with bread crumbs, capers, scallions, and ghee until it stuck together then pressing this onto the lightly floured fish and baking until the fish was done.
