"Du nimmst mir den Atem" would make the most sense in an immediate way, e.g. when you actually tell someone face to face. But it could also be used in writing.
"An dich zu denken nimmt mir den Atem" technically works but it would really depend on context to judge just how "fitting" any of these are.
"Wenn ich an dich denke, empfinde ich Atemnot" is more dramatic and... tough. Like something you might find in Rammstein lyrics, lol.
Haha! 'Dalai Lama' was where I first heard the term. It's one of my FAVOURITE songs by Rammstein (also my fave band) and the verse from whence that quote came can be a tear-jerker for me.
