Serves approx 10/12.
Ingredients
4 carrots
4 courgettes/zucchini
4 large potatoes
2 medium onions
6 garlic cloves
2 tablespoon fresh parsley
4 large eggs, beaten or egg substitute
6 tablespoons matzo meal or flour
sea salt and black pepper to taste
4 tablespoons olive oil
Spray oil
Method
1. Preheat oven to 350f. Use spray oil to grease the casserole dish.
2. In a food processor, coarsely grate zucchini, carrots, potatoes, and onion. Mince of fine chop the garlic and chop the parsley.
3. In a large bowl, mix the grated vegetables with the remaining ingredients.
4. Pour the mixture into the casserole dish. Bake for 45-60 minutes.
5. Serve when the vegetables are tender and the top of the kugel is browned.
