Potato and Mushroom Croquettes (My own recipe)

Ingredients

5 medium potatoes, peeled and chopped
1 medium onion, peeled and finely chopped
125 grams mushrooms, thinly chopped
Sea salt/black pepper to taste
1 cup matzo meal

1tbsp parsley, finely chopped (optional)
Oil for frying or spray oil for oven baking

Method

1. Boil or steam potatoes. Drain and mash potatoes.

2. While potatoes cook sauté onions and mushrooms in oil.

3. In a large bowl, mix mashed potatoes, onions and mushrooms, seasoning and matzo meal together..

4. Form into 10 croquettes.

There are 2 options for cooking.

1. Fry croquettes.

2. The healthier and lazier option is to oven bake. Flatten the croquettes so they look like burgers. Spray baking sheets with spray oil, then spray the top of each burger. Cook in an oven pre-heated to 375f for approx 30 minutes.

Ideas.

1. Coat with breadcrumbs.

2. Use less potato and add butternut squash to make up the same amount.

3. Add cheese or cheese substitute in place of the mushrooms or a little of each

4. Add other cooked vegetables in place of the mushrooms. Possibly with cheese too.

5. Add different herbs or spices.
