Ingredients
2 cups black-eyed beans (pre-cooked or tinned)
1 bunch chopped spring onions
2 cloves of garlic, minced
1 red pepper, chopped
1 tbsp extra virgin olive oil
1/2 bunch parsley, chopped
1 bunch dill, chopped
1 tbsp sumac
1 tbsp dried mint flakes
1 tsp pomegranate molasses/syrup or lemon juice
Method
1. Mix everything well in a bowl and dress with either pomegranate syrup or lemon juice.
