Serves 6-8
Ingredients.
2tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
2 tsp ground cumin
575g (1 1/4lbs) peeled potatoes
350g (12 oz) sweet potatoes
1.2 litres (2 pints) vegetable stock
3-4 tbsp freshly chopped coriander
1tbsp lemon juice
Sea salt and black pepper
Method
1. Heat the oil in a saucepan, add the onions and cumin and fry gently for 8 minutes. Add the garlic and fry for approx 2 more minutes.
2. Meanwhile, dice all of the potatoes. Add them to the pan and fry for five minutes. Stir frequently to prevent sticking. Potatoes should be lightly browned.
3. Add the stock and bring to the boil. Cover and simmer for 30 minutes.
4. Blend soup until smooth (pref with a hand blender in the pan as it requires further cooking)
5. Stir in the coriander and simmer for 2-3 minutes.
6. Serve. Add seasoning at the table.
