Apparently it's been stated in several places that we're going to get to the stage where normal farming isn't going to be enough to feed the world (and that's both animal and plant-based farming), and so insects are a way of dealing with that. I think if it doesn't look like an insect or taste like one, then I might be able to overcome the yuck factor. Maybe. But I'm not a veggie, and totally understand why you wouldn't!
Apparently insect protein is becoming more and more available. I first read about it close to 5 years ago, and know of a restaurant in Toronto that serves crickets as part of their authentic Mexican cuisine.
If I'm going to eat insect protein, I'd rather not know. They can just slyly include the powder in snack bars or something and never tell me.
I did hear the other day that someone is recommending that pet food could be made from insects. That sounds like a better idea to me than trying to get humans to eat them.
I remember when I was in my teens there was a short-lived fad for chocolate-covered ants. Never tried them and it wasn't because they were very expensive.

There's already cochineal in food. Maybe this is the next step.
