I'm pretty sure that Sam already knows it's Ruby and has already slept with her and everything, they just don't want anyone to know. I don't know why he had the presence to botch her name but he had to have known who she was so it must have just been a show.

don't worry, all those answers help me a lot to understand all the drama ahead, and i haven't seen it because i'm from chile/southamerica, and the episodes are a bit late for warner channel in comparision with the CW in USA

There's an episode in the future that actually explains everything. He definitely does know that it's Ruby, considering that she'd have been using that body for a good while prior to the premiere. It'll all be clear as soon as you watch episode nine.
