I lived on a similarly modest budget throughout my early years in New York, which is why I chafe so much at the "no freebies" rule. Complimentary nibbles at work functions were often dinner (or I went praying someone with an expense account would offer to take me out afterwards), and more often than not lunch was a slice of pizza.
What I'm finding is that even with the time to cook & shop, it is nearly impossible to sustain my regular workload while eating on a budget of $7/day. The headaches have been debilitating and my energy levels are wrecked. And I reiterate: I'm NOT starving. But clearly I'm also not getting enough nutrients.
This has been an eye-opening experience. And I thought I was already pretty in-touch with food democracy issues. Wrong.
