oh I like the sound of this experiment. I'll be interested to try the finished product. Are you getting a strong rind flavour? or does the simmering mute that? I've never worked with lemonade lemons so I can't imagine the comparison.
I realised as I was almost finished that squeezing might have added more rind than desirable but the taste just had a bit if a zesty backrgound. I am also looking forward to the finished product and will be glad to share it with you if it is worth sharing 8-> It may be fairly quick the ferment started in about an hour and is going quite quickly now.
