Should I capitalize the words "Psychology" and "Anthropology"?
It feels kind of presumptuous to do so, but disrespectful not to...

I'll try to post a concrete example of my dilemma in the next hour or so.

I think it depends on the circumstances. For example "I was studying the psychology of the monkeys" is not capitalized. But when it's the part of a proper noun like in "My next class is Psychology of Monkeys" then it's capitalized. "The psychology department" wouldn't be, but the "University of Amazonia's School of Psychology" would be.
