Yes, Palm is outdated, but still functional. It does all the things you're looking to do, and there are one or two software companies that do surprising things with it. Case in point, a 3D helicopter gunship game that really cool and chews through battery like starving cat at Fisherman's Wharf.
T-Mobile has a "hiptop" based phone called the Sidekick. Does full internet, has a decent sized screen (for a PDA/phone) and a full keyboard. If it could sync to a Mac, I would probably get that next. MissingSync used to support it, but dropped it back in September. A couple friends of mine have one and their biggest complaint is that as a phone, it is like talking to a bar of Irish Spring. The latest one has Bluetooth support, so it's not as big a deal.
The existence of anti-virus for WinCE devices kills that platform for me. I have much better things for the battery to power.
Hate to say this, but the Sidekick isn't all it's cracked up to be. The first generation ones were, for lack of a better term, compressed fecal matter. The second generation ones aren't even that good. More likely, a Blackberry device would do better.
I have a Cingular 8125 (really just a rebranded HTC Wizard) Windows Mobile device, but that's driven partially because it will sync with the Exchange server at work for only the cost of the data transfer.
I had a Treo 650 for a while, but Palm OS is indeed kind of ugly (and somewhat crashy on the Treo), to be honest I'm glad to be rid of it.
The nice thing about HTC-derived devices is that there's a huge hacking community for them making nice custom ROM's.
Tmobile is okay. Not the best, but not bad by any means.
Verizon has the best network, but they force proprietary OS and software onto all their phones so you can't get updates or drivers from the manufacturer.
Cingular I just switched to, and so far, they're pretty good.
As for the phones, if you want something along the lines of a PDA and phone with other cool functions, I recommend the Motorola Razr v3i and its variants (v3m for Verizon, v3t for Tmobile, and v3i and v3r for Cingular). Besides being the popular Razr casing, it has VASTLY improved functionality (1MP camera, MP3 playback, microSD expandable memory slot, up to 1GB) Yes there are better phones, but these are popular which means you can find them cheaper with the right special, better made than the original Razr (stronger casing, better construction overall).
I've used PalmOS for a long time, so I'm definitely a fan. The new Treo 680 improves on a lot of the complaints about the 650 (Jo had a 650 and just replaced it with a 680 due to loss), especially stability. They're running specials on the 680 right now, so that could be a viable possibility
