Just so I remember what I want to cook (spot the fuzzy brained).

Thai Green Chicken Curry
1 tbl ginger
2 garlic cloves
2 handfuls of coriander
1 handful of basil
3 limes (juice and zest)
6 spring onions
1 tbl coriander seeds
handful lime leaves
1 tbl olive oil
5 chilli (seeded) (less for wossy partner)
salt and pepper

Food process chunky ingredients and then add the rest. Use 1-2 tbls to marinate chicken for a minimum of 20 mins.

For Curry: Sear chicken in hot wok. Add the extra paste and coconut milk. Simmer. Serve with rice and salad.

(NB: Only need 1/2 quantity for two of us!)

Pesto Chicken Salad (Never tried)

Grill chicken breast, slice and dress with pesto add to a salad and sprinkle with toasted pine nuts.
