The S was in a pass/fail class. I know I passed, so maybe it means Satisfactory like in high school?

I don't know what ED stands for, but it's because I was exempt from the class... So, yay.

Like history, english, math, etc.

I thought first year was "core", and then you could pick.

I was exempt from my first semester of English because of my SAT scores; my math was my business statistics and I'm going to CLEP out of college algebra; chem was my first science; theater, psych, choral union, and film were other humanities/fine arts classes; and I'm taking history next semester. You can pick all along what classes you take to take care of the certain requirements, and you can usually take them whenever you want in the first 2 years, as long as you get them completed.
