Hmmm, I'm a little out of touch with Jewish tradition and preparation, but why the foil?

you need to make a separation, a barrier between that which is not kosher for passover and that which is.
Heavy Duty foil is cheap, easy to work with and strong enough for usage.

The actually counters in our kitchen are ceramic tile, so we have arborite counter tops made that I just put down every year to cover the tiled counter, but I didn't have them built for everything.

That is awesome. I've started mine, but have a long day planned for Sunday to get it all finished.

I like the idea of storing ingredients on top of the fridge. That somehow wouldn't have occurred to me (I'm short, the refrigerator I have now is the first one I've ever been able to easily reach the top of), but seems like a much simpler way that anything else I've tried.

Once I saw a weird foil covered display at a Smithsonian and all I could think of was Pesach. Interestingly just our stove top and knobs are ever covered with foil and throughout the year we use the foil burner covers anyway so it just looks slightly more silvery as if our stove was stainless instead of white. We use stiff plastic covers for the counters and other surfaces in contact with food like pantry shelves, the fridge, etc, we close up our cabinets, and we clean but don't cover our fridge handles.
