Those of you who make saag (saag paneer, lamb saag, etc.) - what is your favorite recipe/procedure?

And in the feverish place of "dear god, so many farmshare leaves" - have you tried using lettuce as part of the greens? I am dubious, but hopeful.

The 5 minute need to run for the bus version is oil, garam masala, bib lettuce (yesterday's farmer's market), paneer. It's OK, a little bitter. Would be better with spinach (and onion), but it's not a bad substitute

saag is so much improved by using anything other than spinach. we've put in many lettuces and also pretty much any of the bitter greens (though have to titrate carefully with the really bitter ones).

i feel like i have saag recipe somewhere that i might even have given to you once? but i'm having difficulty digging it up at the moment :/
