I've gotten pretty comfortable in my ability to cook a pretty wide range of American cuisine, so I've been pushing myself to try to grok Chinese. This is kind of hard because other than take out, which is really just crappy Cantonese, I don't know Chinese food too well. Question: Do you know why takeout is Cantonese? Do they have the most emigrants? Is Cantonese food the cheapest/easiest to make?
