Do Americans use the euphemism 'water under the bridge' for things that have occured in the past and are no longer worth worrying about? Or is there another phrase that they'd use?

"Water under the bridge" is fine.

"Water under the bridge" is probably the best phrase for it, although "ancient history" might work too, depending on the circumstances.

Yup, pretty common, though as zebuloncrispi said, "ancient history" would work too.

We do indeed. I think it might be considered a bit old-fashioned at this point in time but it's certainly still understood.
