Seeing as how tonight's dinner was way more exciting than last night's PB&J, I'm going to count today as Day 5. Okay? Right.
It's Friday and the weather's fine so I decided to make something that required a little bit of effort (and most of my pots and pans). Besides, I had leftover ground turkey from Pasta night that I needed to use.
With most Mexican dishes, the ingredients are the same. It just depends on how you put 'em together. Tonight, I'm making Taco's with Rice and Beans on the side. Timing is everything so get the rice started in the cooker. That'll take about 20 minutes so get the veg or corn oil heated in a deep pan for Taco shell making (unless you want to cop out and buy ready-made shells). Meat can also be cooking. I added some taco seasoning to the meat, which gives it a little kick.
Insert tortilla in taco shell holder and immerse in hot oil. Be careful! Length of time depends on how crunchy you like your shells. Mine need to be somewhere between soft and crunchy. I let the shells drain a bit on a cookie sheet with a paper towel.
The rice was finished at this time so I microwaved the refried beans, scooped the meat into the shells and added taco sauce (mild) cheese, chopped onions, tomatoes and lettuce.
And there you have it. Tacos tonight. Tostadas tomorrow?
