12 hard cooked eggs, peeled, cut in half, yolks removed 4 ounces of softened cream cheese 2 teaspoons curry powder 2 teaspoons ground ginger 1 1/4 cups unsweetened shredded coconut, toasted on a baking sheet in a 350 F oven until light brown 3 tablespoons mayonnaise 1/4 cup minced scallions Major Grey's or your favorite chutney 1/2 cup fresh cilantro, cut into thin strips *salt to taste (you don't have to add any, but some people prefer a bit of salt to offset the sweet)
In a food procesor, combine the yolks with everything but the scallions, cilantro, and chutney. Pulse until very smooth. Transfer mixture to a bowl and fold in the scallions.
Fill the whites evenly with the mixture. Garnish each egg half with a small spoonful of chutney and a sprinkling of cilantro.
