I washed and trimmed the beets, wrapped them in foil and roasted at 400 for a little over an hour, then peeled and sliced. I just served them with (raw) spinach and feta, tossed with a little balsamic vinegar and olive oil.
I will report back on the chickpeas. I've seen several recipes online for roasting them until crunchy, and so I'll prob combine/tweak them based on what spices I have on hand.
