I wish M liked eggplant more b/c I would do eggplant parm. He doesn't hate it or anything, but I think he got kind of burned out on it b/c it's something my mom makes a lot when we visit, b/c she knows I love it.

The sauce for the sesame chicken is honey, soy sauce, garlic, and...salt I think? I got it from Martha's website, the recipe is called "lighter sesame chicken." I think that it is Joe's favorite thing that I make. Definitely in his top 3, anyway.

savory french toast is usually made with brioche or a rosemary artisan bread and i put parmesan cheese, black pepper, thyme, and whatever else sounds good in the batter. oh, and tarragon, when i have it. beer -n-butter caramelized onions on top = yes yes y'all!

I should note that because of my restricted diet, a lot of these meals I cook for Tim only and don't eat myself. But he promises they're good. :) Anyway, these are the meals I make most:
Veggie pot pie
Pizza with vegan pepperoni and red pepper
Shepard's pie with vegan ground "beef"
Black bean and sweet potato quesadillas
Zucchini "crab cakes"
Cauliflower casserole
Vegetable noodle soup
Vegetarian enchiladas
Vegetarian meatloaf
Mexican casserole
Southwestern salad
Spicy southwest cheesy soup

Salads (even my boys like them for the most part)
Tomatoes
Tons of avocado
Grilled salmon
Shrimp
Stir Fry (I eat it veggie and the guys add chicken) with rice
Homemade nachos (usually bean with tomato and avocado on top)
Tacos, tacos, tacos (we get the raw pre-formed tortillas and cook 'em fresh...we use tortillas way more than bread)
Chicken (for the guys)
Spaghetti (the guys with meat sauce, mine with garlic and red pepper flake)
Tons of fruit
Pizzas of all sorts
Eggs (breakfast tacos or quiches)
Brownies!!
